The correct operation of the tandoor depends on its service life and the preservation of its appearance. To maximize the longevity of your ceramic oven, follow these simple tips based on experience:

 When lighting the tandoor, while the firewood is burning in it, it is necessary to remove the top cover and put the cauldron (the firewood has not yet completely burned out, but at the same time enough heat has already accumulated in the tandoor, which can be used for cooking). It will take about an hour to warm up the tandoor, depending on its configuration and dimensions. Given this time, you can pick up a dish that will be cooked while the tandoor is warming up.
To get smoky dishes, you need to leave a small amount of coals in the tandoor. For those who love a delicious crispy crust, it is enough to open the small lid and blew about 5 minutes before the end of the full cooking of the dish.
During the preparation of meat dishes, fat can accumulate on the walls of the tandoor. Do not worry that the ceramic oven will function worse from this. The fat should not be peeled off the walls. The next time the ceramic furnace is fired, it will burn out, the walls will remain clean again.
Particular attention should be paid to safety during ignition. During the period when firewood is burning in a ceramic stove, the height of the flame can reach 1 m. During this period, the tandoor is very hot, so you should not neglect personal safety equipment. When firing up, the stove must be installed about a meter away from all objects, trees, flammable objects.
For maximum safety when using the tandoor, especially when lighting it, it is better to use gloves, as the inner and outer parts of the tandoor are too hot.
The tandoor is made of special fireclay clay, which has undergone high-temperature firing and is not afraid of the cold. Thanks to this, the tandoor can be installed outdoors all year round. The tandoor is not afraid of precipitation (rain and snow), even at such a time it can be used for cooking. The only rule is that during rainy weather it will take more time and firewood to heat the stove. This is due to the fact that some of the heat will be spent on evaporation of moisture. To prevent the tandoor from absorbing moisture, it is advisable to store it in a dust and moisture resistant cover.
It is better to use dry wood to light the tandoor. The optimal solution is oak and ash. To give dishes a unique aroma and taste, experts recommend using fruit trees - apple, cherry. It is not recommended to use coniferous wood containing carcinogens in resins.
In the tandoor, you can cook excellent coals for lighting the barbecue. To do this, it is enough to warm up the tandoor, wait for the coals, and transfer them to the brazier or barbecue.
